Ingredients

  • Pork tenderloin - 250 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Long-grain rice - 150 grams
  • Chicken broth - 400 milliliters
  • Dried oregano - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic to the saucepan and sauté for another minute until fragrant.
  3. Cut the pork tenderloin into bite-sized pieces and season with salt, pepper, oregano, and cinnamon. Add the pork to the saucepan and cook until browned on all sides, about 6-8 minutes.
  4. Stir in the rice and cook for 2 minutes, allowing it to absorb some flavors.
  5. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes until the rice is cooked and has absorbed the liquid.
  6. Remove from heat, drizzle with lemon juice, and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork, stir in chopped parsley, and serve warm.
