- Pork loin - 400 grams
- Fresh figs - 100 grams (about 8 figs)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a small bowl, mix olive oil, minced garlic, chopped thyme, lemon juice, salt, and black pepper to create a marinade.
- Rub the marinade all over the pork loin, ensuring it is well coated. Let it sit for at least 15 minutes to absorb the flavors.
- While the pork is marinating, wash and slice the figs in half.
- Once the grill is hot, place the pork loin on the grill and cook for about 15-20 minutes, turning occasionally, until it reaches an internal temperature of 63°C (145°F).
- During the last 5 minutes of cooking, add the fig halves to the grill cut-side down to caramelize them slightly.
- Remove the pork from the grill and let it rest for 5 minutes before slicing.
- Serve the sliced pork with the grilled figs on the side.
