Ingredients

  • Pork loin - 400 grams
  • Fresh figs - 100 grams (about 8 figs)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a small bowl, mix olive oil, minced garlic, chopped thyme, lemon juice, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the pork loin, ensuring it is well coated. Let it sit for at least 15 minutes to absorb the flavors.
  4. While the pork is marinating, wash and slice the figs in half.
  5. Once the grill is hot, place the pork loin on the grill and cook for about 15-20 minutes, turning occasionally, until it reaches an internal temperature of 63°C (145°F).
  6. During the last 5 minutes of cooking, add the fig halves to the grill cut-side down to caramelize them slightly.
  7. Remove the pork from the grill and let it rest for 5 minutes before slicing.
  8. Serve the sliced pork with the grilled figs on the side.
