- Pork loin - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red onion - 1 medium, cut into wedges
- Bell pepper (any color) - 1 medium, cut into chunks
- Cherry tomatoes - 200 grams, halved
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create a marinade.
- Add the pork loin cubes to the marinade and mix well to coat. Cover and let marinate in the refrigerator for at least 15 minutes.
- While the pork is marinating, prepare the vegetables by cutting the red onion and bell pepper into chunks and halving the cherry tomatoes.
- Preheat the grill or BBQ to medium-high heat.
- Once the pork has marinated, thread the pork cubes, red onion wedges, bell pepper chunks, and cherry tomatoes onto the skewers, alternating the ingredients.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
- Remove the skewers from the grill and allow them to rest for a couple of minutes before serving.
