Ingredients

  • Pork loin - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1 medium, cut into wedges
  • Bell pepper (any color) - 1 medium, cut into chunks
  • Cherry tomatoes - 200 grams, halved
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create a marinade.
  2. Add the pork loin cubes to the marinade and mix well to coat. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. While the pork is marinating, prepare the vegetables by cutting the red onion and bell pepper into chunks and halving the cherry tomatoes.
  4. Preheat the grill or BBQ to medium-high heat.
  5. Once the pork has marinated, thread the pork cubes, red onion wedges, bell pepper chunks, and cherry tomatoes onto the skewers, alternating the ingredients.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and allow them to rest for a couple of minutes before serving.
