- Pork loin - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Oregano - 1 tablespoon, dried
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red onion - 1, sliced
- Bell pepper - 1, sliced
- Zucchini - 1, sliced
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper to create a marinade.
- Place the pork loin in the marinade, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Remove the pork loin from the marinade and let excess marinade drip off. Discard the remaining marinade.
- Grill the pork loin for about 25-30 minutes, turning occasionally, until the internal temperature reaches 63°C (145°F).
- While the pork is grilling, toss the sliced red onion, bell pepper, and zucchini in a little olive oil and season with salt and pepper.
- Add the vegetables to the grill during the last 10 minutes of cooking, turning until they are tender and slightly charred.
- Once cooked, remove the pork from the grill and let it rest for 5 minutes before slicing.
- Serve the sliced pork loin with grilled vegetables, topped with crumbled feta cheese and fresh parsley.
