Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Cucumber - 1/2, sliced
  • Tomato - 1 medium, diced
  • Red onion - 1/4, thinly sliced
  • Plain Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, and black pepper to create a marinade.
  2. Cut the pork tenderloin into thin strips and add it to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the pork is marinating, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a small bowl. Set aside.
  4. Heat a skillet over medium-high heat and add the marinated pork strips. Cook for about 8-10 minutes, stirring occasionally, until the pork is cooked through and slightly caramelized.
  5. While the pork is cooking, warm the whole wheat pita bread in a separate pan or microwave for about 30 seconds.
  6. To assemble the gyros, place a portion of the cooked pork in the center of each pita. Top with sliced cucumber, diced tomato, and red onion.
  7. Drizzle the yogurt sauce over the top, fold the pita in half, and serve immediately.
