- Pork tenderloin - 300 grams

- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat pita bread - 2 pieces
- Cucumber - 1/2, sliced
- Tomato - 1 medium, diced
- Red onion - 1/4, thinly sliced
- Plain Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, and black pepper to create a marinade.
- Cut the pork tenderloin into thin strips and add it to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
- While the pork is marinating, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a small bowl. Set aside.
- Heat a skillet over medium-high heat and add the marinated pork strips. Cook for about 8-10 minutes, stirring occasionally, until the pork is cooked through and slightly caramelized.
- While the pork is cooking, warm the whole wheat pita bread in a separate pan or microwave for about 30 seconds.
- To assemble the gyros, place a portion of the cooked pork in the center of each pita. Top with sliced cucumber, diced tomato, and red onion.
- Drizzle the yogurt sauce over the top, fold the pita in half, and serve immediately.
