Pork Belly Skewers

Ingredients
- Pork belly - 400 grams, cut into 2.5 cm cubes
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Dried oregano - 2 teaspoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Add the pork belly cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or preferably overnight.
- Preheat the grill to medium-high heat.
- Thread the marinated pork belly cubes onto the soaked wooden skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the pork is cooked through and has a nice char.
- Remove from the grill and let rest for a few minutes before serving.
