Ingredients

  • Pork loin - 300 grams
  • Dried prunes - 100 grams
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, chopped rosemary, sea salt, and black pepper to create a marinade.
  2. Cut the pork loin into bite-sized pieces and add them to the marinade. Mix well, ensuring the pork is thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. While the pork is marinating, soak the dried prunes in warm water for about 10 minutes to soften them, then drain and set aside.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated pork pieces onto skewers, alternating with the soaked prunes.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving. Enjoy your Pork and Prunes skewers warm.
