  • Red onion, thinly sliced - 1/4 medium
  • Kalamata olives, pitted and sliced - 50 grams
  • Greek yogurt - 100 grams
  • Fresh dill, chopped - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a bowl, mix the shredded chicken with olive oil, lemon juice, salt, and black pepper. Set aside to marinate for 5 minutes.
  2. While the chicken is marinating, prepare the vegetables: dice the cucumber and tomato, thinly slice the red onion, and slice the Kalamata olives.
  3. In a small bowl, combine Greek yogurt, chopped dill, a pinch of salt, and black pepper to create a yogurt sauce.
  4. Heat a non-stick skillet over medium heat and warm the pita bread for about 1 minute on each side until soft and pliable.
  5. To assemble, lay the warmed pita on a plate and layer on the marinated chicken, diced cucumber, tomato, red onion, and Kalamata olives.
  6. Drizzle the yogurt sauce over the top and fold the pita wraps. Serve immediately.
