Ingredients

  • 2 large bell peppers (any color) - 300g
  • 100g feta cheese, crumbled
  • 50g cream cheese, softened
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the crumbled feta cheese, cream cheese, olive oil, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined.
  4. Stuff each bell pepper with the feta mixture, pressing down gently to pack it in.
  5. Place the stuffed peppers upright in a baking dish. Drizzle with a little extra olive oil on top if desired.
  6. Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the tops are slightly golden.
