Ingredients
- 2 large bell peppers (any color) - 300g
- 250g ground beef (or lamb)
- 50g cauliflower rice
- 1 small onion, finely chopped - 70g
- 2 cloves garlic, minced
- 1 medium tomato, diced - 150g
- 50g feta cheese, crumbled
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent.
- Add the ground beef (or lamb) to the skillet and cook until browned, breaking it apart with a spatula.
- Stir in the diced tomato, cauliflower rice, oregano, basil, salt, and pepper. Cook for an additional 5 minutes until the mixture is well combined.
- Remove from heat and mix in the crumbled feta cheese.
- Stuff each bell pepper generously with the meat mixture and place them upright in a baking dish.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are slightly browned.
- Garnish with fresh parsley before serving.
