Ingredients

  • 2 large bell peppers (any color) - 300g
  • 250g ground beef (or lamb)
  • 50g cauliflower rice
  • 1 small onion, finely chopped - 70g
  • 2 cloves garlic, minced
  • 1 medium tomato, diced - 150g
  • 50g feta cheese, crumbled
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  4. Add the ground beef (or lamb) to the skillet and cook until browned, breaking it apart with a spatula.
  5. Stir in the diced tomato, cauliflower rice, oregano, basil, salt, and pepper. Cook for an additional 5 minutes until the mixture is well combined.
  6. Remove from heat and mix in the crumbled feta cheese.
  7. Stuff each bell pepper generously with the meat mixture and place them upright in a baking dish.
  8. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are slightly browned.
  10. Garnish with fresh parsley before serving.
