Ingredients

  • Bell peppers (red or green) - 2 medium
  • Cooked rice (brown or white) - 150 grams
  • Tomato (diced) - 1 medium
  • Red onion (finely chopped) - 50 grams
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh dill (chopped) - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a pan, heat the olive oil over medium heat and sauté the red onion until translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the diced tomato, cooked rice, parsley, dill, salt, black pepper, and paprika. Mix well and cook for 5 minutes, allowing the flavors to combine.
  6. Remove the mixture from heat and add lemon juice, stirring to combine.
  7. Stuff each bell pepper with the rice mixture, packing it in gently.
  8. Place the stuffed peppers upright in a baking dish and pour the vegetable broth around them.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.
  11. Serve warm, drizzled with a little extra olive oil if desired.
