Ingredients

  • Red bell peppers - 2 large
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the crumbled feta cheese, chopped parsley, dried oregano, minced garlic, olive oil, salt, black pepper, and lemon juice.
  4. Stuff each bell pepper with the feta mixture until they are filled to the top.
  5. Place the stuffed peppers upright in a baking dish and drizzle a little olive oil over the top.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.
  8. Allow to cool for a few minutes before serving.
