Ingredients
- Red bell peppers - 2 large
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the tops off the red bell peppers and remove the seeds and membranes.
- In a mixing bowl, combine the crumbled feta cheese, chopped parsley, dried oregano, minced garlic, olive oil, salt, black pepper, and lemon juice.
- Stuff each bell pepper with the feta mixture until they are filled to the top.
- Place the stuffed peppers upright in a baking dish and drizzle a little olive oil over the top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.
- Allow to cool for a few minutes before serving.
