  • Carrot - 1 medium, diced
  • Bell pepper (any color) - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot and bell pepper, cooking for another 5 minutes until they soften.
  4. Add the diced tomato, dried oregano, salt, and black pepper, and cook for 2-3 minutes until the tomato starts to break down.
  5. Add the long-grain rice to the mixture, stirring to coat the rice with the vegetable mixture.
  6. Pour in the vegetable broth and bring to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let sit covered for an additional 5 minutes.
  9. Fluff the rice with a fork, and stir in the chopped fresh parsley before serving.
