- Bell pepper (any color) - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a medium saucepan over medium heat.
- Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot and bell pepper, cooking for another 5 minutes until they soften.
- Add the diced tomato, dried oregano, salt, and black pepper, and cook for 2-3 minutes until the tomato starts to break down.
- Add the long-grain rice to the mixture, stirring to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let sit covered for an additional 5 minutes.
- Fluff the rice with a fork, and stir in the chopped fresh parsley before serving.
