- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 400 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4 minutes.
- Add the minced garlic, diced carrot, and diced bell pepper to the saucepan. Cook for an additional 5 minutes until the vegetables soften.
- Stir in the chopped tomato, dried oregano, salt, and black pepper. Cook for another 2 minutes, allowing the tomatoes to break down slightly.
- Drain the soaked rice and add it to the saucepan, stirring to combine it with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and sprinkle with chopped fresh parsley before serving.
