Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 400 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4 minutes.
  3. Add the minced garlic, diced carrot, and diced bell pepper to the saucepan. Cook for an additional 5 minutes until the vegetables soften.
  4. Stir in the chopped tomato, dried oregano, salt, and black pepper. Cook for another 2 minutes, allowing the tomatoes to break down slightly.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine it with the vegetables.
  6. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and sprinkle with chopped fresh parsley before serving.
