Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Pine nuts - 30 grams
  • Almonds - 30 grams, roughly chopped
  • Dried apricots - 50 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the rinsed basmati rice and toast for 2-3 minutes, stirring frequently to coat the rice with the oil.
  5. Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, toast the pine nuts and chopped almonds in a dry skillet over medium heat for 3-4 minutes until golden brown. Stir frequently to prevent burning.
  8. Once the rice is cooked, remove it from heat and let it sit for 5 minutes with the lid on.
  9. Fluff the rice with a fork and gently fold in the toasted nuts, dried apricots, chopped parsley, mint, and lemon juice.
