- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Pine nuts - 30 grams
- Almonds - 30 grams, roughly chopped
- Dried apricots - 50 grams, chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rinsed basmati rice and toast for 2-3 minutes, stirring frequently to coat the rice with the oil.
- Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, toast the pine nuts and chopped almonds in a dry skillet over medium heat for 3-4 minutes until golden brown. Stir frequently to prevent burning.
- Once the rice is cooked, remove it from heat and let it sit for 5 minutes with the lid on.
- Fluff the rice with a fork and gently fold in the toasted nuts, dried apricots, chopped parsley, mint, and lemon juice.
