Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 30 grams
  • Fresh dill, chopped - 20 grams
  • Fresh mint, chopped - 20 grams
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the drained rice and cook for 2-3 minutes, stirring frequently to toast the rice lightly.
  5. Pour in the vegetable broth, add salt and pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for 5 minutes to steam.
  8. Fluff the rice with a fork, then gently fold in the chopped herbs and lemon juice. Adjust seasoning if needed.
  9. Serve warm, garnished with additional herbs if desired.
