- Basmati rice - 150 grams
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 30 grams
- Fresh dill, chopped - 20 grams
- Fresh mint, chopped - 20 grams
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the drained rice and cook for 2-3 minutes, stirring frequently to toast the rice lightly.
- Pour in the vegetable broth, add salt and pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for 5 minutes to steam.
- Fluff the rice with a fork, then gently fold in the chopped herbs and lemon juice. Adjust seasoning if needed.
- Serve warm, garnished with additional herbs if desired.
