- Egg - 1 large
- Almond flour - 30 grams
- Basil pesto - 60 grams
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Olive oil - 1 tablespoon
- Spinach - 50 grams, fresh
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 220°C (425°F).
- In a large bowl, mix the riced cauliflower, shredded mozzarella, egg, almond flour, salt, and black pepper until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15 minutes, or until golden and firm.
- Remove the crust from the oven and spread the basil pesto evenly over the top.
- Sprinkle crumbled feta cheese, halved cherry tomatoes, and fresh spinach on top of the pesto layer.
- Drizzle with olive oil and return the pizza to the oven for an additional 10 minutes, until the cheese is melted and the toppings are heated through.
