Ingredients

  • Cauliflower - 300 grams, riced
  • Mozzarella cheese - 100 grams, shredded
  • Egg - 1 large
  • Almond flour - 30 grams
  • Basil pesto - 60 grams
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 1 tablespoon
  • Spinach - 50 grams, fresh
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, mix the riced cauliflower, shredded mozzarella, egg, almond flour, salt, and black pepper until well combined.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 15 minutes, or until golden and firm.
  5. Remove the crust from the oven and spread the basil pesto evenly over the top.
  6. Sprinkle crumbled feta cheese, halved cherry tomatoes, and fresh spinach on top of the pesto layer.
  7. Drizzle with olive oil and return the pizza to the oven for an additional 10 minutes, until the cheese is melted and the toppings are heated through.
  8. Allow the pizza to cool for a couple of minutes, then slice and serve warm.
