  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Pesto - 4 tablespoons
  • Goat cheese - 100 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Olives - 50 grams, sliced
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, coconut flour, salt, olive oil, egg, and water to form a dough.
  3. Roll out the dough on a parchment-lined baking sheet to form a flatbread shape, about 1/4 inch thick.
  4. Bake the flatbread in the preheated oven for 10-12 minutes, or until lightly golden.
  5. Remove the flatbread from the oven and spread the pesto evenly over the surface.
