Ingredients
- Arborio rice - 150 grams
- Vegetable broth - 500 ml
- Fresh green peas - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (for a cheesy flavor)
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a separate large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic to the pan and cook for another minute until fragrant.
- Stir in the Arborio rice and toast it for 1-2 minutes until slightly translucent.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently, and allowing the liquid to be absorbed before adding more.
- After about 10 minutes of cooking, add the fresh green peas and continue to stir and add broth until the rice is creamy and al dente, about 15-20 minutes total.
- Once the rice is cooked, remove from heat and stir in the lemon juice, chopped dill, nutritional yeast, salt, and black pepper to taste.
- Serve warm, garnished with extra dill if desired.
