Ingredients

  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Fresh green peas - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (for a cheesy flavor)

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a separate large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic to the pan and cook for another minute until fragrant.
  4. Stir in the Arborio rice and toast it for 1-2 minutes until slightly translucent.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently, and allowing the liquid to be absorbed before adding more.
  6. After about 10 minutes of cooking, add the fresh green peas and continue to stir and add broth until the rice is creamy and al dente, about 15-20 minutes total.
  7. Once the rice is cooked, remove from heat and stir in the lemon juice, chopped dill, nutritional yeast, salt, and black pepper to taste.
  8. Serve warm, garnished with extra dill if desired.
