- Beets - 300 grams, peeled and diced
- Chickpeas - 200 grams, cooked
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Dill - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the diced beets to the pot and stir for another 2-3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the beets are tender.
- Stir in the cooked chickpeas, dill, salt, and black pepper. Cook for an additional 5 minutes to heat through.
- Remove from heat and add lemon juice to taste. Adjust seasoning if necessary.
- Serve hot, garnished with extra dill if desired.
