Ingredients

  • Beets - 300 grams, peeled and diced
  • Chickpeas - 200 grams, cooked
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Dill - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the diced beets to the pot and stir for another 2-3 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the beets are tender.
  4. Stir in the cooked chickpeas, dill, salt, and black pepper. Cook for an additional 5 minutes to heat through.
  5. Remove from heat and add lemon juice to taste. Adjust seasoning if necessary.
  6. Serve hot, garnished with extra dill if desired.
