- Zucchini - 100 grams
- Red bell pepper - 100 grams

- Red onion - 50 grams
- Cherry tomatoes - 150 grams
- Cucumber - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
- Pine nuts - 30 grams, toasted
Steps
- Preheat the grill to medium-high heat.
- Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thick strips.
- In a bowl, toss the sliced vegetables with 1 tablespoon of olive oil, salt, and black pepper.
- Place the vegetables on the grill and cook for about 5-7 minutes per side, until they are tender and have nice grill marks.
- While the vegetables are grilling, chop the cucumber and cherry tomatoes and place them in a large mixing bowl.
- In a small bowl, whisk together the remaining olive oil and lemon juice, then pour it over the chopped vegetables.
- Once the grilled vegetables are done, remove them from the grill, let them cool slightly, and then chop them into bite-sized pieces.
- Add the grilled vegetables to the mixing bowl with the fresh vegetables, and toss everything together.
- Sprinkle the chopped parsley, crumbled feta cheese, and toasted pine nuts on top before serving.
