Ingredients

  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Yellow bell pepper - 100 grams
  • Red onion - 50 grams
  • Cherry tomatoes - 150 grams
  • Cucumber - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thick strips.
  3. In a bowl, toss the sliced vegetables with 1 tablespoon of olive oil, salt, and black pepper.
  4. Place the vegetables on the grill and cook for about 5-7 minutes per side, until they are tender and have nice grill marks.
  5. While the vegetables are grilling, chop the cucumber and cherry tomatoes and place them in a large mixing bowl.
  6. In a small bowl, whisk together the remaining olive oil and lemon juice, then pour it over the chopped vegetables.
  7. Once the grilled vegetables are done, remove them from the grill, let them cool slightly, and then chop them into bite-sized pieces.
  8. Add the grilled vegetables to the mixing bowl with the fresh vegetables, and toss everything together.
  9. Sprinkle the chopped parsley, crumbled feta cheese, and toasted pine nuts on top before serving.
