Ingredients

  • Potatoes - 400 grams
  • Pork belly (halal) - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel and cut the potatoes into small cubes, then soak them in cold water for about 10 minutes to remove excess starch.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Cut the pork belly into small pieces and add it to the skillet. Cook until the pork is browned and cooked through, about 8-10 minutes.
  5. Sprinkle paprika, dried oregano, salt, and black pepper over the pork mixture. Stir well to combine and let it simmer on low heat for another 5 minutes.
  6. While the pork is cooking, drain the soaked potatoes and pat them dry. In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat.
  7. Add the potato cubes to the pan and fry until golden brown and crispy, about 10-12 minutes. Stir occasionally to ensure even cooking.
  8. Once the potatoes are done, drain them on paper towels to remove excess oil and season with salt.
  9. Serve the crispy potatoes topped with the kavourmas (pork mixture) and garnish with fresh parsley.
