- Pork belly (halal) - 200 grams

- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Peel and cut the potatoes into small cubes, then soak them in cold water for about 10 minutes to remove excess starch.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Cut the pork belly into small pieces and add it to the skillet. Cook until the pork is browned and cooked through, about 8-10 minutes.
- Sprinkle paprika, dried oregano, salt, and black pepper over the pork mixture. Stir well to combine and let it simmer on low heat for another 5 minutes.
- While the pork is cooking, drain the soaked potatoes and pat them dry. In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat.
- Add the potato cubes to the pan and fry until golden brown and crispy, about 10-12 minutes. Stir occasionally to ensure even cooking.
- Once the potatoes are done, drain them on paper towels to remove excess oil and season with salt.
- Serve the crispy potatoes topped with the kavourmas (pork mixture) and garnish with fresh parsley.
