- Swiss chard - 150 grams, chopped
- Spinach - 100 grams, chopped
- Fresh dill - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the diced carrot, celery, and potato to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce to a simmer. Cook for about 10 minutes, or until the vegetables are tender.
- Stir in the chopped Swiss chard and spinach, and let them wilt for about 3 minutes.
- Add the fresh dill, lemon juice, salt, and black pepper. Adjust seasoning to taste and cook for an additional 2 minutes.
