Ingredients

  • Zucchini - 200 grams
  • Bell peppers (mixed colors) - 150 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 50 grams
  • Feta cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini and bell peppers into thick strips, and cut the cherry tomatoes in half.
  3. Cut the red onion into wedges.
  4. In a large bowl, toss the zucchini, bell peppers, cherry tomatoes, and red onion with 1 tablespoon of olive oil, salt, pepper, and dried oregano.
  5. Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
  6. While the vegetables are grilling, crumble the feta cheese into a small bowl and mix it with the remaining olive oil, lemon juice, and chopped parsley.
  7. Once the vegetables are done, remove them from the grill and let them cool slightly.
  8. In a serving dish, combine the grilled vegetables with the feta dressing, gently toss together, and serve immediately.
