- Zucchini - 200 grams
- Bell peppers (mixed colors) - 150 grams
- Cherry tomatoes - 100 grams
- Red onion - 50 grams
- Feta cheese - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill to medium-high heat.
- Slice the zucchini and bell peppers into thick strips, and cut the cherry tomatoes in half.
- Cut the red onion into wedges.
- In a large bowl, toss the zucchini, bell peppers, cherry tomatoes, and red onion with 1 tablespoon of olive oil, salt, pepper, and dried oregano.
- Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the vegetables are grilling, crumble the feta cheese into a small bowl and mix it with the remaining olive oil, lemon juice, and chopped parsley.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- In a serving dish, combine the grilled vegetables with the feta dressing, gently toss together, and serve immediately.
