- beef tripe - 300 grams
- beef bone broth - 500 ml
- water - 250 ml
- onion - 1 medium, chopped
- garlic - 2 cloves, minced
- celery - 1 stalk, chopped
- carrot - 1 medium, diced
- bay leaf - 1
- dried oregano - 1 teaspoon
- fresh parsley - 2 tablespoons, chopped
- lemon juice - 1 tablespoon
- black pepper - to taste
- salt - to taste
Steps
- Clean the beef tripe thoroughly under cold running water and cut it into small strips.
- In a large pot, combine the beef bone broth and water, bringing it to a simmer over medium heat.
- Add the chopped onion, garlic, celery, carrot, bay leaf, and dried oregano to the pot, stirring well.
- Introduce the beef tripe to the pot and let it simmer gently for about 60 minutes, or until the tripe is tender.
- After 60 minutes, remove the bay leaf and season the soup with salt and black pepper to taste.
- Stir in the fresh parsley and lemon juice just before serving to enhance the flavor.
- Ladle the soup into bowls and enjoy hot.
