Ingredients

  • beef tripe - 300 grams
  • beef bone broth - 500 ml
  • water - 250 ml
  • onion - 1 medium, chopped
  • garlic - 2 cloves, minced
  • celery - 1 stalk, chopped
  • carrot - 1 medium, diced
  • bay leaf - 1
  • dried oregano - 1 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • black pepper - to taste
  • salt - to taste

Steps

  1. Clean the beef tripe thoroughly under cold running water and cut it into small strips.
  2. In a large pot, combine the beef bone broth and water, bringing it to a simmer over medium heat.
  3. Add the chopped onion, garlic, celery, carrot, bay leaf, and dried oregano to the pot, stirring well.
  4. Introduce the beef tripe to the pot and let it simmer gently for about 60 minutes, or until the tripe is tender.
  5. After 60 minutes, remove the bay leaf and season the soup with salt and black pepper to taste.
  6. Stir in the fresh parsley and lemon juice just before serving to enhance the flavor.
  7. Ladle the soup into bowls and enjoy hot.
