- Vegetable broth - 150 ml
- Parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
Steps
- Preheat the oven to 180°C (350°F).
- Peel the potatoes and cut them into thick slices.
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped tomatoes, vegetable broth, oregano, salt, black pepper, and bay leaf. Bring to a simmer.
- Add the sliced potatoes to the skillet, ensuring they are well coated with the sauce.
- Transfer the mixture to a baking dish, cover with aluminum foil, and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 10-15 minutes until the potatoes are tender and the top is slightly golden.
- Remove from the oven, discard the bay leaf, and sprinkle with chopped parsley before serving.
