  • Tomatoes - 400 grams, canned or fresh, chopped
  • Vegetable broth - 150 ml
  • Parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Bay leaf - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel the potatoes and cut them into thick slices.
  3. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the chopped tomatoes, vegetable broth, oregano, salt, black pepper, and bay leaf. Bring to a simmer.
  6. Add the sliced potatoes to the skillet, ensuring they are well coated with the sauce.
  7. Transfer the mixture to a baking dish, cover with aluminum foil, and bake in the preheated oven for 40 minutes.
  8. After 40 minutes, remove the foil and bake for an additional 10-15 minutes until the potatoes are tender and the top is slightly golden.
  9. Remove from the oven, discard the bay leaf, and sprinkle with chopped parsley before serving.
