- Walnuts - 100 grams
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
- While the pasta is cooking, heat 2 tablespoons of olive oil in a skillet over medium heat.
- Add the minced garlic to the skillet and sauté until fragrant, about 1 minute, being careful not to burn it.
- Add the walnuts to the skillet and toast them for about 3-4 minutes, stirring frequently until they are golden and fragrant.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the garlic and walnuts, along with the reserved pasta water.
- Stir in the remaining olive oil, lemon juice, chopped parsley, salt, and black pepper. Mix well to combine all ingredients.
- Serve hot, topped with grated Parmesan cheese if desired.
