Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Walnuts - 100 grams
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté until fragrant, about 1 minute, being careful not to burn it.
  4. Add the walnuts to the skillet and toast them for about 3-4 minutes, stirring frequently until they are golden and fragrant.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the garlic and walnuts, along with the reserved pasta water.
  7. Stir in the remaining olive oil, lemon juice, chopped parsley, salt, and black pepper. Mix well to combine all ingredients.
  8. Serve hot, topped with grated Parmesan cheese if desired.
