Ingredients

  • Whole wheat pasta - 200 grams
  • Fresh tomatoes - 400 grams, diced
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Boil a large pot of salted water and cook the whole wheat pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, but not browned.
  4. Stir in the diced tomatoes and dried oregano, and cook for 5-7 minutes until the tomatoes break down and create a sauce.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the tomato sauce, mixing well to combine, and add reserved pasta water as needed to adjust the sauce consistency.
  7. Season with salt, black pepper, and chopped basil, stirring until everything is well combined.
  8. Serve the pasta in bowls, topped with crumbled feta cheese and additional basil if desired.
