- Whole wheat pasta - 200 grams
- Fresh tomatoes - 400 grams, diced
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon, dried
- Feta cheese - 50 grams, crumbled
- Salt - to taste
- Black pepper - to taste
Steps
- Boil a large pot of salted water and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, but not browned.
- Stir in the diced tomatoes and dried oregano, and cook for 5-7 minutes until the tomatoes break down and create a sauce.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the tomato sauce, mixing well to combine, and add reserved pasta water as needed to adjust the sauce consistency.
- Season with salt, black pepper, and chopped basil, stirring until everything is well combined.
- Serve the pasta in bowls, topped with crumbled feta cheese and additional basil if desired.
