Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Canned tomatoes (crushed) - 400 grams
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large pan over medium heat.
  3. Add the minced garlic and chopped onion to the pan, sautéing until the onion is translucent, about 3-4 minutes.
  4. Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Bring to a simmer and let cook for about 10-15 minutes, stirring occasionally.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the tomato sauce and toss to combine, adding reserved pasta water as needed to achieve desired sauce consistency.
  7. Remove from heat and stir in crumbled feta cheese and chopped parsley.
  8. Serve hot, garnished with additional feta and parsley if desired.
