Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Fresh tomatoes, diced - 400 grams
  • Fresh basil leaves, chopped - 1/2 cup
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Vegan parmesan cheese (optional) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the diced tomatoes, salt, black pepper, and red pepper flakes (if using). Cook for 10-12 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the rest.
  6. Add the drained pasta to the skillet with the tomato mixture, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Remove from heat and stir in the chopped basil. Adjust seasoning if necessary.
  8. Serve hot, topped with vegan parmesan cheese if desired.
