- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Fresh tomatoes, diced - 400 grams
- Fresh basil leaves, chopped - 1/2 cup
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes (optional) - 1/4 teaspoon
- Vegan parmesan cheese (optional) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the diced tomatoes, salt, black pepper, and red pepper flakes (if using). Cook for 10-12 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the rest.
- Add the drained pasta to the skillet with the tomato mixture, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Remove from heat and stir in the chopped basil. Adjust seasoning if necessary.
- Serve hot, topped with vegan parmesan cheese if desired.
