Ingredients

  • Whole wheat pasta - 150 grams
  • Tahini - 50 grams
  • Garlic - 1 clove, minced
  • Lemon juice - 30 ml
  • Cold water - 50 ml
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 1 tablespoon (15 ml)
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Cook the whole wheat pasta in a pot of boiling salted water according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, prepare the tarator sauce by mixing tahini, minced garlic, lemon juice, and cold water in a bowl until smooth.
  3. Add chopped parsley, olive oil, salt, and black pepper to the tarator sauce, stirring well to combine.
  4. Once the pasta is cooked, drain it and return it to the pot over low heat.
  5. Pour the tarator sauce over the warm pasta and toss gently to coat evenly.
  6. Add the halved cherry tomatoes and mix gently to incorporate.
  7. Serve immediately, garnished with extra parsley if desired.
