Ingredients

  • Whole grain pasta - 150 grams
  • Sun-dried tomatoes (oil-packed) - 80 grams, drained and chopped
  • Fresh spinach - 100 grams
  • Garlic - 2 cloves, minced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  7. Add the drained pasta to the skillet with the sun-dried tomatoes and spinach, mixing well.
  8. If the mixture seems dry, add a little reserved pasta water until you reach the desired consistency.
  9. Stir in the crumbled feta, chopped basil, and lemon juice, mixing well to combine.
  10. Season with salt and black pepper to taste before serving.
