Ingredients
- Whole grain pasta - 150 grams
- Sun-dried tomatoes (oil-packed) - 80 grams, drained and chopped
- Fresh spinach - 100 grams
- Garlic - 2 cloves, minced
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the sun-dried tomatoes and spinach, mixing well.
- If the mixture seems dry, add a little reserved pasta water until you reach the desired consistency.
- Stir in the crumbled feta, chopped basil, and lemon juice, mixing well to combine.
- Season with salt and black pepper to taste before serving.
