Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Fresh spinach - 150 grams
  • Feta cheese - 75 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 1 tablespoon, chopped
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.
  4. Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes.
  5. Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the spinach, along with the lemon juice, crumbled feta cheese, and chopped dill.
  7. If the mixture seems dry, add a little reserved pasta water to reach the desired consistency.
  8. Season with salt, black pepper, and red pepper flakes if using, then toss everything together until well combined.
