- Fresh spinach - 150 grams
- Feta cheese - 75 grams, crumbled
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 1 tablespoon, chopped
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.
- Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the spinach, along with the lemon juice, crumbled feta cheese, and chopped dill.
- If the mixture seems dry, add a little reserved pasta water to reach the desired consistency.
- Season with salt, black pepper, and red pepper flakes if using, then toss everything together until well combined.
