- Whole grain pasta - 200 grams
- Shrimp, peeled and deveined - 250 grams
- Cherry tomatoes, halved - 150 grams
- Zucchini, diced - 1 medium
- Red onion, thinly sliced - 1 small
- Garlic, minced - 2 cloves
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Feta cheese, crumbled - 50 grams
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - optional, to taste
Steps
- Cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red onion, and sauté for 2-3 minutes until the onion is translucent.
- Add the shrimp to the skillet, cooking for about 3-4 minutes until they turn pink and opaque.
- Stir in the cherry tomatoes and zucchini, cooking for an additional 3-4 minutes until the vegetables are tender.
- Add the cooked pasta to the skillet and pour in the lemon juice, remaining olive oil, and season with salt, black pepper, and red pepper flakes if desired. Toss everything together until well combined.
- Remove from heat and stir in the chopped parsley and crumbled feta cheese. Serve warm.
