Ingredients

  • Whole wheat pasta - 150 grams
  • Lean turkey sausage - 200 grams, casings removed
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 grams, for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the turkey sausage, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes.
  3. Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes are warmed through.
  5. Add the cooked pasta to the skillet and toss everything together until well combined. Cook for another minute to heat through.
  6. Remove from heat and stir in the crumbled feta cheese. Serve hot, garnished with fresh basil.
