Ingredients
- Whole wheat pasta - 150 grams
- Lean turkey sausage - 200 grams, casings removed
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Feta cheese - 50 grams, crumbled
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 10 grams, for garnish
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the turkey sausage, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes.
- Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for another 5 minutes until the vegetables begin to soften.
- Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes are warmed through.
- Add the cooked pasta to the skillet and toss everything together until well combined. Cook for another minute to heat through.
- Remove from heat and stir in the crumbled feta cheese. Serve hot, garnished with fresh basil.
