- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente, about 8-10 minutes.
- In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 5 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the vegetable broth and the saffron with its soaking water into the skillet. Bring the mixture to a simmer.
- Add the halved cherry tomatoes and fresh spinach to the skillet, cooking for about 3-4 minutes until the spinach wilts and the tomatoes soften.
- Once the pasta is cooked, drain it and add it to the skillet, tossing to combine with the sauce and vegetables.
- Stir in the crumbled feta cheese, lemon juice, and season with salt and black pepper to taste. Cook for another 1-2 minutes to heat through.
