  • Saffron threads - 1/4 teaspoon
  • Vegetable broth - 300 ml
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 5 minutes.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the vegetable broth and the saffron with its soaking water into the skillet. Bring the mixture to a simmer.
  5. Add the halved cherry tomatoes and fresh spinach to the skillet, cooking for about 3-4 minutes until the spinach wilts and the tomatoes soften.
  6. Once the pasta is cooked, drain it and add it to the skillet, tossing to combine with the sauce and vegetables.
  7. Stir in the crumbled feta cheese, lemon juice, and season with salt and black pepper to taste. Cook for another 1-2 minutes to heat through.
  8. Serve warm, garnished with fresh parsley.
