Ingredients
- Pasta (spaghetti or penne) - 200 grams
- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Garlic - 2 cloves, minced
- Olive oil - 4 tablespoons
- Feta cheese - 100 grams, crumbled
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the red and yellow bell peppers in half, remove the seeds, and place them on a baking sheet, cut side down.
- Drizzle 1 tablespoon of olive oil over the peppers and roast in the preheated oven for 20 minutes until the skins are blistered.
- While the peppers are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the peppers are roasted, remove them from the oven and let them cool for a few minutes. Then peel off the skins and chop the flesh into strips.
- In a large skillet, heat the remaining 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped roasted peppers to the skillet and stir to combine. Season with salt, black pepper, and red pepper flakes (if using).
- Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
- Remove from heat and stir in the crumbled feta cheese and fresh basil.
- Serve warm, garnished with additional basil if desired.
