Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves, minced
  • Olive oil - 4 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the red and yellow bell peppers in half, remove the seeds, and place them on a baking sheet, cut side down.
  3. Drizzle 1 tablespoon of olive oil over the peppers and roast in the preheated oven for 20 minutes until the skins are blistered.
  4. While the peppers are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  5. Once the peppers are roasted, remove them from the oven and let them cool for a few minutes. Then peel off the skins and chop the flesh into strips.
  6. In a large skillet, heat the remaining 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the chopped roasted peppers to the skillet and stir to combine. Season with salt, black pepper, and red pepper flakes (if using).
  8. Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
  9. Remove from heat and stir in the crumbled feta cheese and fresh basil.
  10. Serve warm, garnished with additional basil if desired.
