  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the sliced red and yellow bell peppers to the skillet and sauté for about 5-7 minutes, until they are tender.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the peppers, mixing well.
  7. Pour in the reserved pasta water, lemon juice, salt, and black pepper, stirring to combine and create a light sauce.
  8. Remove from heat and stir in the chopped parsley and crumbled feta cheese, if using.
  9. Serve immediately, garnished with extra parsley and feta, if desired.
