- Yellow bell pepper - 1 medium, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the sliced red and yellow bell peppers to the skillet and sauté for about 5-7 minutes, until they are tender.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the peppers, mixing well.
- Pour in the reserved pasta water, lemon juice, salt, and black pepper, stirring to combine and create a light sauce.
- Remove from heat and stir in the chopped parsley and crumbled feta cheese, if using.
- Serve immediately, garnished with extra parsley and feta, if desired.
