  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Black olives (pitted and sliced) - 100 grams
  • Green olives (pitted and sliced) - 50 grams
  • Capers - 2 tablespoons, rinsed
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced black and green olives, capers, and halved cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften.
  4. Add the cooked pasta to the skillet, along with the reserved pasta water, lemon juice, red pepper flakes, salt, and black pepper. Toss everything together gently until well combined and heated through.
  5. Remove from heat and stir in the chopped fresh parsley. Adjust seasoning if necessary and serve immediately.
