  • Whole wheat pasta - 160 grams

  • Garlic - 2 cloves, minced
  • Mixed nuts (walnuts, almonds, pistachios) - 100 grams, roughly chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated feta cheese - 50 grams (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. Add the chopped mixed nuts to the skillet and toast them for 2-3 minutes, stirring frequently to prevent burning.
  4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  5. Add the drained pasta to the skillet with the toasted nuts and garlic, along with the lemon zest and juice.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt and black pepper to taste, and stir in the chopped parsley.
  8. Serve warm, topped with grated feta cheese if desired.
