- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 3 tablespoons
- Garlic (minced) - 2 cloves
- Mushrooms (sliced, such as cremini or button) - 200 grams
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Feta cheese (crumbled) - 50 grams
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden brown and tender.
- Stir in the cooked pasta, reserved pasta water, lemon juice, and chopped parsley. Toss everything together until well combined.
- Season with salt, black pepper, and red pepper flakes (if using) to taste.
- Remove from heat and serve topped with crumbled feta cheese.
