Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 2 cloves
  • Mushrooms (sliced, such as cremini or button) - 200 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Feta cheese (crumbled) - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden brown and tender.
  4. Stir in the cooked pasta, reserved pasta water, lemon juice, and chopped parsley. Toss everything together until well combined.
  5. Season with salt, black pepper, and red pepper flakes (if using) to taste.
  6. Remove from heat and serve topped with crumbled feta cheese.
