Ingredients
- Whole wheat pasta - 150 grams
- Fresh mint leaves - 30 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 20 grams, toasted
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Once the pasta is done, reserve 1/4 cup of the pasta cooking water and then drain the pasta.
- Add the drained pasta to the skillet with the tomatoes and garlic, along with the reserved pasta water, lemon juice, chopped mint, salt, and black pepper. Toss everything together over low heat for 2 minutes.
- Remove from heat and stir in the crumbled feta cheese and toasted pine nuts.
- Serve immediately, garnished with additional mint leaves if desired.
