Ingredients

  • Whole wheat pasta - 200 grams
  • Green lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the green lentils under cold water and drain.
  2. In a medium pot, bring 500 ml of vegetable broth to a boil, add the lentils, and simmer for about 15-20 minutes until tender. Drain and set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until softened.
  4. Stir in the tomato paste and dried oregano, cooking for an additional 2 minutes.
  5. Add the cooked lentils to the skillet and mix well. Season with salt and black pepper to taste.
  6. Meanwhile, cook the whole wheat pasta according to package instructions until al dente. Drain and reserve a little pasta water.
  7. Combine the pasta with the lentil mixture in the skillet, adding a splash of reserved pasta water if needed to loosen the sauce. Toss to combine.
  8. Serve hot, garnished with fresh chopped parsley.
