Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Olive oil - 3 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - 20 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.
  5. Add the drained pasta to the skillet with the garlic and olive oil, and toss to combine.
  6. Stir in the fresh lemon juice, lemon zest, chopped parsley, and dill. If the pasta seems dry, add some reserved pasta water to reach your desired consistency.
  7. Season with salt and black pepper to taste.
  8. Serve the pasta warm, garnished with grated Parmesan cheese if desired.
