Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh dill (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 30 grams

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, but not browned.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the garlic.
  4. Pour in the lemon juice and lemon zest, and toss the pasta to combine. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  5. Stir in the chopped dill, and season with salt and black pepper to taste.
  6. Serve immediately, topped with grated Parmesan cheese if desired.
