- Pasta (spaghetti or linguine) - 150 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon zest - 1 tablespoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with garlic.
- Stir in lemon zest, lemon juice, and the reserved pasta water gradually, mixing well to combine. Cook for an additional 2-3 minutes.
- Remove from heat and stir in chopped parsley. Season with salt and black pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese if desired.
