Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon zest - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with garlic.
  4. Stir in lemon zest, lemon juice, and the reserved pasta water gradually, mixing well to combine. Cook for an additional 2-3 minutes.
  5. Remove from heat and stir in chopped parsley. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
