Ingredients

  • Pasta (whole wheat spaghetti) - 150 grams
  • Kavourmas (Greek cured pork) - 100 grams, diced
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced Kavourmas and sauté for about 5-7 minutes until it starts to brown and release its flavors.
  3. Add the minced garlic to the skillet and cook for another minute until fragrant.
  4. Stir in the halved cherry tomatoes and dried oregano, cooking for another 3-4 minutes until the tomatoes soften.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
  6. Combine the cooked pasta with the Kavourmas and vegetable mixture. Toss well and season with salt and black pepper to taste.
  7. Serve the pasta warm, topped with crumbled feta cheese and chopped fresh parsley.
