- Pasta (whole wheat spaghetti) - 150 grams
- Kavourmas (Greek cured pork) - 100 grams, diced
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced Kavourmas and sauté for about 5-7 minutes until it starts to brown and release its flavors.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Stir in the halved cherry tomatoes and dried oregano, cooking for another 3-4 minutes until the tomatoes soften.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Combine the cooked pasta with the Kavourmas and vegetable mixture. Toss well and season with salt and black pepper to taste.
- Serve the pasta warm, topped with crumbled feta cheese and chopped fresh parsley.
