- Spaghetti - 200 grams
- Extra virgin olive oil - 4 tablespoons
- Garlic - 4 cloves, thinly sliced
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced and zested
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for 2-3 minutes until golden and fragrant, being careful not to burn it.
- Add the red pepper flakes to the skillet and stir for another 30 seconds.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the spaghetti.
- Add the drained spaghetti to the skillet with the garlic and oil. Toss well to combine, adding reserved pasta water a little at a time until desired consistency is reached.
- Remove from heat and stir in the lemon juice, lemon zest, chopped parsley, and season with salt and black pepper to taste.
- Serve immediately, topped with grated Parmesan cheese if desired.
