Ingredients

  • Whole wheat spaghetti - 160 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic - 4 cloves, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Feta cheese - 50 grams, crumbled

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.
  3. Add the thinly sliced garlic to the skillet and sauté for about 2-3 minutes, or until the garlic is golden and fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.
  5. Add the drained pasta to the skillet with the garlic oil and toss to combine. If the pasta seems dry, add a little reserved pasta water.
  6. Stir in the fresh parsley, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss everything together until well mixed.
  7. Serve the pasta in bowls, topped with crumbled feta cheese.
