Pasta with Garlic

Ingredients
- Whole wheat spaghetti - 160 grams
- Extra virgin olive oil - 4 tablespoons
- Garlic - 4 cloves, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Feta cheese - 50 grams, crumbled
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.
- Add the thinly sliced garlic to the skillet and sauté for about 2-3 minutes, or until the garlic is golden and fragrant, being careful not to burn it.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.
- Add the drained pasta to the skillet with the garlic oil and toss to combine. If the pasta seems dry, add a little reserved pasta water.
- Stir in the fresh parsley, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss everything together until well mixed.
- Serve the pasta in bowls, topped with crumbled feta cheese.
