- Spaghetti - 150 grams
- Fresh white fish fillets (such as cod or haddock) - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 30 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the fish fillets to the skillet, season with salt and pepper, and cook for about 3-4 minutes on each side until cooked through and flaky.
- Once the fish is cooked, add the cherry tomatoes to the skillet and sauté for an additional 2-3 minutes until they start to soften.
- Drain the cooked spaghetti and add it directly to the skillet with the fish and tomatoes.
- Drizzle the lemon juice over the pasta and gently toss everything together to combine.
- Remove from heat, stir in the chopped parsley, and top with crumbled feta cheese if desired.
- Serve immediately, garnished with extra parsley and a drizzle of olive oil if preferred.
